Bumper Sweet Potato Harvest

Kumara being cooked by students

Horticulture students recently harvested nearly 50kgs of white sweet potato or kumara (Ipomoea batatas) which they have been growing in a raised bed in the horticulture compound.

To assist their understanding of the paddock to plate process horticulture teachers Brett and Andrew also conducted cooking lessons with the students to prepare sweet potato curries. These curries were thoroughly enjoyed by everyone who was fortunate to get a sample.
In horticulture, students have been learning about the sweet potato industry including the varieties available, optimal growing conditions and how to tend to the needs of a crop.
